CARNE DE COCIDO CON TOMATE/STEW MEAT LEFTOVERS WITH TOMATOE SAUCE
With a chickpeas stew you can do a lot of things with its leftovers, we can do a soup with noodles, soup with meatballs, soup with small chopped pieces of the meat and a boiled egg, also you can do what we call "ropa vieja" "old cloth", fry in a saucepan the chickpeas and the meat until they become really crunchy. You can do a rice in the oven or if you prefer chickepeas and sweetchard stew.
But this time we are going to do a tomatoe sauce for the meat leftovers. Take big red and mature tomatoes and do the sauce at your own taste, i fry in a sauce pan with a bit of olive Oil some garlic cloves, chopped onions and when the onions are soft and golden ,add some cooked red peppers and the chopped tomatoes, leave it at soft fire until the tomatoes are done and put the food-mill to make the sauce, then add the meat leftovers than you have previosuly cut in pieces. In other places they put this meat along with blackpudding and roasted red peppers.
