COCIDO GARBANZOS/CHICKPEAS STEW

Con la llegada del Otoño poco a poco va entrado el frío en el Sur y como tengo prometido a mi marido a finales de Septiembre empiezo la temporada de los cocidos, plato que le encanta y que me ha pedido hasta en Agosto¡¡¡ pero en vista de las calorías y sudores que me daban cada vez que se los hacia en plena canícula, me planté e instauré mis temporadas, el cocido los dejo de hacer en Junio porque ya en esa época empieza a apretar el calor hasta como he dicho bien entrado el otoño.
Este cocido es una mezcla del que hace mi amatxu y el que hacia mi suegra, y la verdad no me sale mal del todo...sobretodo la sopita que recuerdo que mi aita me decía que levantaba hasta los espíritus. Probarlo y me diréis como os ha salido¡¡¡
Ingredientes para 4 personas:
2 muslos y contra muslos de pollo
300 gramos de morcillo (o zancarron)
300 gramos de tocino fresco (no salado)
1 rama de apio
1 puerro
1 o 2 zanahorias
Medio kilo de garbanzos lechosos (a mi me gustan de la marca Koifer porque son los únicos que se ponen blandos con el agua tan dura del Levante, no tengo que echarles ni bicarbonato)
1 diente de ajo
1 poquito de perejil
1 patata mediana por persona

Como el agua de la zona de Levante es bastante dura,suelo poner el cocido en una olla express pero a fuego lento, los garbanzos se quedan muy melosos y blandos y las carnes no se deshacen así.
Lleno la olla de agua hasta el borde donde están las asas, en frió le pongo el tocino y el morcillo, junto con la zanahoria pelada, el apio y el puerro limpios previamente.
Cuando el agua está caliente, añado los garbanzos y dejo que espume y con una rasera le quito la espuma, acto seguido le añado el pollo, dejo otra vez que espume. Entonces cierro la olla express y dejo que se vaya haciendo a fuego moderado una hora más o menos.
Con cuidado que no deje de hervir, aparto del fuego la olla y la abro para poder echar las patatas previamente peladas (no partirlas, si ponéis una patata mediana por persona se hará muy bien entera y no se deshará) inmediatamente ponéis la olla otra vez en el fuego pues si dejáis que pare el hervor los garbanzos se quedarán duros. Le añadís el diente de ajo picado y el perejil picado y un poco de colorante alimentario. Cerrar otra vez la tapa y dejar durante 15 minutos.
Abrir y servir
Si queréis poner una sopa, una vez hayáis hecho todo, sacáis caldo y lo ponéis en una cazuela aparte dejando que hierba, le echáis un puñadito de fideos finos por persona, estará hecho en 5 minutos.
Con este cocido yo tengo para varios días, pues si no tomo la sopa el mismo día por la mañana, la preparo para cenar, al día siguiente hago un arroz al horno con el caldo y los garbanzos sobrantes (otro día os explico como se hace), y si todavía te ha sobrado puedes hacer ropa vieja que es simplemente poniendo en una sartén con aceite los garbanzos y la carne, dejando que los garbanzos se queden bien frititos y crujientes.

 Otra idea que hace mi madre es coger la carne y hacer una salsa de tomate y ponerlos en una cazuela de barro con unos pimientos asados y morcilla de burgo, sale delicioso.
Otra idea que pondré otro día es hacer unas pelotas con el cocido, se preparan y se ponen con el caldo a hervir durante media hora y se sirve de primer plato, después se come el resto del cocido, es muy típico de Murcia.

With the Autumn season arriving, it is getting cold here in the South of Spain and as i promised my husband, i start to cook stews as it is a dish he loves more, he also had asked me to do them in August¡¡¡ but in view of the heat and the sweats i have each time i did them, i claimed and i only would do them from October till the beggining of June.
This stew is a mix of the ones my mum does and the ones that my mother in law used to do, and to be honest i think i have improved them..

Ingredients for 4 persons
2 chicken legs and thighs
300 grs shin
300 grs fresh fatty pork (not salted)
1 celery leaf
1 leek
1 or 2 carrots
Half a kilo of chickpeas
1 garlic clove
A bit of persil
Colouring food
As in this Mediterranean part of Spain the water is too hard, i put the stew in the pressure cooker at medium fire.
Fill the pressure cooker with cold water till the handle, add the shin and the fatty pork together with the peeled carrot, the celery and leek previosuly cleaned.
When the water is hot then add the chickpeas and leave this to skim then with a skimmer take out the skim, then add the chicken and leave it again to skim. Close the pressure cooker and leave it at moderate fire for around one hour .
slow fire, so chickpeas become softer and the meat do not break up.
Open the pressure cooker with care so that the water does not stop boiling (if it does this the chickpeas become hard), add the potatoes (do not slice them, put them whole one medium size potatoe per person), inmediately put the cooker again in the fire. Then you add the chopped garlic and persil and a bit of food colouring. Close the cooker and leave it at medium fire for 15 minutes
Open and serve
If you want to make a soup, once you have done everything, take a bit of the broth and put it in another casserole and when it is boiling add the noodles, in 5 minutes they will  be done.
With this stew i have for some days, if i do not eat the soup in the lunch and prepare it for the dinner. The following day i do a roasted rice with the broth and meat leftovers, also if you have more leftovers you can do what we call here "old cloth" which is frying in a saucepan the chickpeas and the meat, the chickpeas will be very crunchy in this way.
Another idea that my mum does is to take the meats, make a tomate sauce and put it all together with roasted red peppers and blackpudding, this is delicious.
One of this days i will show you how to do meatballs and boil them in the soup, it serves as first dish and after you can eat the rest of the stew, this is very typical from the Mediterranean area.
